Local fish is transformed with the distinctive flavours of Kerala, from coconut and tamarind to curry leaves, ginger and black pepper. Signature dishes include Alleppey Fish Curry, with local tuna, and Pollichathu, featuring kingfish marinated in masala and wrapped in banana leaves. Other favourites include Kerala Fried Chicken, Mushroom Pacha Masala and Chicken Biryani.
